3 tbsp butter
2 cloves garlic, peeled and crushed
1 cooking onion, diced
1 can (496ml) whole tomatoes
1 1/2 tbsp liquid honey
1/4 tsp salt
1/2 tsp freshly ground pepper
Place a heavy bottomed medium pot over medium-low heat and add the butter. Once the butter is melted add the garlic and onion and cook, stirring occasionally for 5min.
Add the tomatoes along with 1 cup water. Bring everything to a simmer and cook covered for 15-20min or until the onion has softened completely.
Stir in the honey, salt and pepper.
Use an immersion blender (or counter top blender) to blend the soup until you have a smooth velvety consistency. If you want the soup thinner just add a little more water and then season to taste.
