3 INGREDIENT: tomato soup

So you are looking at this ingredient list and you are counting more than three right? Just as in my 5 ingredient recipes, butter, oil, salt and pepper get a pass because you should have them on hand at all times.  My logic is that you use at least two or three of these "freebie" ingredients in everything you cook, so they don't count towards the three.    The three main ingredients in this delicious recipe work in perfect harmony to create a creamy tomato soup that has delightful balance of richness and sweetness.  

 

3 tbsp butter

1 cooking onion, diced

1 can (496ml) whole tomatoes

1 1/2 tbsp liquid honey

1/4 tsp salt

1/2 tsp freshly ground pepper

 

  1. Place a heavy bottomed medium pot over medium heat and add the butter.  Once the butter is melted add the onion and cook, stirring occasionally for 5min.  

  2. Add the tomatoes along with 1 cup water.  Bring everything to a simmer and cook covered for 15-20min or until the onion has softened completely.  

  3. Stir in the honey, salt and pepper.

  4. Using a hand blender (or counter top blender) blend the soup until you have a smooth velvety consistency. If you want it thinner just add a little more water and then season to taste.
