This isn't your average stove top or instant oatmeal. This oatmeal is baked in the oven and sends the warming scent of apples and cinnamon throughout the house. The first time I made this I was amazed at how delicious it was. The egg and milk give the oatmeal a creamy delicate texture that is down right addictive. Baking this recipe on a brisk autumn morning is just about the best way to start any day.
1 tsp butter
2 cups large flaked oats
1/2 cup walnut (or pecan) pieces
1/3 cup brown sugar plus 1 tbsp
1 1/2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp salt
2 cups milk
3 tbsp melted butter
4 cups diced apple
Preheat oven to 375F
Grease an 8x8 baking dish with 1 tsp butter.
Combine the oats, pecans, 1/3 cup of brown sugar, cinnamon, baking powder and salt in a bowl and stir.
In another bowl, whisk together the milk, 2 tbsp of the melted butter and egg.
Peel and dice the apple into bite sized pieces and mix with 1 tbsp brown sugar. Scatter two thirds of the apple on the bottom of the greased baking dish.
Pour the oat mixture on top on the apples followed by the milk mixture.
Top with the remaining third of apple pieces and drizzle with the remaining 1 tbsp melted butter.
Place in the middle rack of the oven and cook, uncovered for 40min.
Serving suggestion: serve with plain balkan yogurt.
Tip: This recipe is great to make on a Sunday and then eaten throughout the week for a quick breakfast.
Tip: You can use any fruit you prefer, including frozen fruit.
